The chemical name of disodium phosphate is disodium hydrogen phosphate. It occurs primarily in two forms. The first is a crystalline form, the second is an anhydrous form. The anhydrous form does not contain water.
Disodium phosphate is an acidity regulator and a chelating agent. It is synthesized from the sodium salt of phosphoric acid (from fermented phosphates in the USA). Disodium phosphate acts as an emulsifier to balance the system during most freezing and creaming.
