As a food additive, it is listed in the Codex Alimentarius as E number 282. Calcium propanoate is used as a preservative in a wide variety of products, including but not limited to bread, other baked goods, processed meat, whey, and other dairy products. [2] In agriculture, it is also used as a milk fat and feed additive in cows, among other things [3]. Propanoates, like benzoates, prevent microbes from producing the energy they need. However, unlike benzoates, propanoates do not require an acidic environment.
Calcium propionate is an organic salt formed by the reaction of Calcium Hydroxide with propionic acid. Its chemical formula is Ca(OOCCH2CH3)2. Calcium propionate can be produced in both crystalline and powdered forms. Calcium propionate is readily soluble in water and slightly soluble in alcohol.
Propionic acid is naturally found in some foods and works as a preservative in these foods. For example, some types of cheese contain high amounts of natural propionic acid.
