Sorbic acid is an additive used as a versatile and safe food preservative that is highly effective against bacteria, molds and yeasts. It is included in the food additives list with the code E200. Since it has antimicrobial properties, it is used very widely as a food preservative. The amount of sorbic acid allowed in foods varies between approximately 0.5 and 0.025%. It is used very effectively against many microorganisms.
Sorbic acid is called by this name because it was first obtained from the unripe fruits of the mountain ash tree (Sorbus aucuparia). The antibacterial and antimycotic effects of the acid were determined in 1945. With this development, it began to be used as a preservative in food products. Sodium sorbate, calcium sorbate, potassium sorbate are sorbic acid salts that prevent mold and yeast formation. Since they have different solubility properties, their application areas are extremely wide.
